INGREDIENTS
- 1 lb. skirt steak, cut into 1/2 -inch strips
- ½ yellow onion, sliced
- 2 bell peppers, sliced
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained and rinsed (or frozen corn, warmed)
- 3 cups cooked brown rice
- Juice of ½ lime
- ½ tsp. cumin
- ½ tsp. chili powder
- 1 Tbsp. oil

- To build bowls, start with about 2/3 cup rice per bowl. Top with steak, onions and peppers, black beans, and corn.
