INGREDIENTS
  • 2 eggs
  • ¼ cup chopped spinach
  • 2 Tbsp. crumbled feta
  • 6 cherry tomatoes, halved
  • Salt and pepper, to taste

 

INSTRUCTIONS
  1. Whisk together eggs with salt and pepper.
  2. Heat skillet over medium heat and spray with cooking spray. Pour egg mixture into heated skillet. Cook for 1-2 minutes
  3. Add spinach, tomatoes, and feta cheese. Continue cooking for 2-3 more minutes (the edges will begin to fold up).
  4. Use a spatula to fold the omelet in half. Continue cooking until the cheese is melted, about 1-3 more minutes.
