Oven Baked Acorn Squash

This easy and savory baked acorn squash is full of fall flavor and is the perfect side dish to pork or chicken.

INGREDIENTS
  • 1 acorn squash
  • 1 ½ Tbsp. olive oil
  • ½ tsp. salt
  • ½ tsp. pepper
  • ½ tsp. garlic powder
  • 1 tsp. dried parsley
  • ¼ tsp. cayenne pepper
  • Optional: 2 Tbsp. parmesan cheese
INSTRUCTIONS
  • Heat oven to 425.
  • Line baking pan with foil, spray with cooking spray.
  • Cut squash in half, remove seeds and strings with a large spoon. Cut into 8 wedges.
  • Place squash in a mixing bowl, toss with olive oil, salt, pepper, garlic powder, parsley, and cayenne.
  • Place squash wedges on foil lined baking sheet and bake for 40-50 minutes or until tender and look slightly browned.
