Crispy Tofu Tacos

Tofu is a versatile ingredient that is full of protein and is quite simple to cook. Even if you are a tofu skeptic, we recommend you try this recipe - we do not think you you be disappointed! This recipe uses all whole foods and can serve your whole family.

INGREDIENTS
  • 12 oz. extra firm tofu
  • 3 Tbsp. cornstarch
  • 3 Tbsp. mayonnaise
  • 1 tsp. sriracha
  • Juice of 1 lime, plus zest
  • 3 oz shredded red cabbage
  • 2 tsp. taco seasoning
  • 1 Tbsp. olive oil
  • 8 small flour or corn tortillas
  • 2 oz. queso fresco, crumbled
  • Cilantro, minced, for garnish
  • Salt and pepper
INSTRUCTIONS
  1. Prepare Tofu. Use paper towels on a plate and on top of the tofu. Firmly press to remove excess liquid from the tofu. This may take several attempts. Cut tofu into ½ inch cubes. Place tofu cubes into a mixing bowl and add cornstarch. Gently toss to coach thoroughly.
  2. In a small separate bowl, make sriracha mayonnaise by combining mayonnaise, sriracha, and lime zest.
  3. In a small separate bowl, combine shredded red cabbage, lime juice, ¼ tsp salt, ¼ tsp pepper.
  4. Fry Tofu. Add olive oil to a large, non-stick pan over medium-high heat. Add tofu cubes to the hot pan, rotating the cubes until they are browned (5-10 minute). When done, put cooked tofu cubes into a bowl, toss in taco seasoning to coat.
  5. Assemble your tacos! Warm up your tortillas in the microwave wrapped in a damp paper towel for 25-30 seconds. Add tofu, cabbage, queso fresco, and top with cilantro and sriracha mayo!

Make this meal gluten free: swap the flour tortillas for corn tortilla and check you are using gluten free taco seasonings for a gluten free variation of this meal.
