Dark Chocolate Ginger Cookies

Chocolate + ginger = spiced holiday goodness! Try this healthy twist on ginger snap cookies that is perfectly spiced and will satisfy your holiday cravings.
Dark Chocolate Ginger Cookies
EQUIPMENT

  • Refrigerator
  • Oven
INGREDIENTS
  • 4 tbsp. butter
  • 2 small bananas ripe and mashed
  • 1/4 cup dark brown sugar
  • 1/2 cup sugar substitute blend for baking
  • 1/2 cup molasses
  • 1 1/2 cups whole-wheat flour
  • 1 1/4 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 2 tbsp. dark cocoa powder
  • 1 tsp. baking soda
  • 3.5 oz 70% cocoa dark chocolate bar fine chop
  • 3 tbsp. sugar in the raw
  • 1 dash fine finishing salt optional
INSTRUCTIONS
  • Cream margarine, banana, brown sugar and sugar substitute by hand or with a mixer.
  • In a medium bowl measure out your dry ingredients and add to wet ingredients, blend.
  • Add the chopped dark chocolate bar. Place contents in the freezer and freeze up to 2 hours.
  • Roll cookies into 1” balls and roll in raw sugar. Refrigerate again for 20 minutes.
  • Bake at 350 degrees for 12-15 minutes or until cookies begin to crack.
  • The longer the cookies bake the firmer they will be, but these are a soft cookie.

Profile Sugar Cookies

Made with vanilla cake batter flavors, this Profile-friendly Sugar Cookie recipe makes soft & chewy treats that are delicious and healthier than most.

INSTRUCTIONS
To prepare cookies:
  • Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  • Mix together cookie ingredients and add water until you reach desired cookie dough consistency.
  • Transfer the cookie dough to the center of a large sheet of plastic wrap, and shape dough into a rectangle. Cover with another sheet of plastic wrap and chill for 1 hour.
  • Leaving the cookie dough in the plastic wrap, roll it out until you reach desired thickness. Lightly flour your cookie cutter, and press into the dough. Place cookies on prepared baking sheet. Re-roll any unused dough and repeat.  
  • Bake for 7 minutes. Remove from oven and allow to completely cool. 

 

To frost cookies:

  • In a small bowl, add protein powder. Then, adding the milk 1 tablespoon at a time, slowly stir together to reach desired frosting/icing consistency. Spoon into a zip-lock bag and snip off the corner. Pipe onto cooled cookies. 
  • Add additional toppings as desired and enjoy!
