We challenged our stores to create the ultimate Profile-approved cold pasta recipe. Each location submitted their top recipe to go head-to-head in the final taste test at Profile HQ. Crunchy Thai Peanut Noodle Salad

INGREDIENTS
  • 1 cucumber, sliced in strips
  • 1 red bell pepper or 8 mini peppers, sliced in strips
  • ½ cup shredded carrot
  • ¼ cup cilantro
  • ¼ cup green onion
  • Sauce:
    • 4T PB2
    • 2T soy sauce or coconut aminos (gluten free)
    • 2T water
    • 2 T rice vinegar
    • ¼ tsp sriracha
    • ½ tsp ground ginger
    • 2 cloves garlic
INSTRUCTIONS
Cook Profile Pasta according to package directions and drain. Rinse under cold water. Place cooled noodles in a large bowl and toss with cucumber, pepper, carrots, cilantro, and green onion. In a small bowl, whisk together the sauce ingredients and drizzle sauce over noodles. Serve cold and enjoy thoroughly!
Tip:
If you love the sauce, it can be re-created and used in many other dishes! Feel free to substitute mint or basil if you’re not much of a cilantro person.
