Thai Coconut Chicken Lettuce Wraps

This quick dish is full of flavor! Chicken in a rich, creamy blend of coconut milk and Thai spices pairs well with refreshing, crisp veggies.

INGREDIENTS

1 pkg. Thai-Style Coconut Chicken

Romaine lettuce leaves

¼ red bell pepper, finely chopped

½ cup shredded purple cabbage

¼ cup shredded carrot

1 green onion, finely sliced

1 Tbsp. cilantro, chopped

1 Tbsp. peanuts, chopped

Juice of ½ lime

INSTRUCTIONS
  1. Cook Thai-Style Coconut Chicken according to package directions.
  2. Let cool for 5 min while you prepare the other ingredients.
  3. Add chicken to a bowl with red pepper, cabbage, carrot, green onion, cilantro, peanuts, and lime juice.
  4. Eat on a lettuce wrap or in a salad!

INGREDIENTS

1 pkg. Cilantro Lime Chicken

1 cup riced cauliflower

2 small red bell peppers, sliced

1 bag spinach

1 Tbsp. oil

1 lime, cut into wedges

1 cup pico de gallo

INSTRUCTIONS
  1. Heat oil in a large sauté pan over medium-high heat. Add riced cauliflower and sauté until tender, about 5 minutes. Set aside.
  2. In a separate pan, prepare Cilantro Lime Chicken as directed.
  3. To the same pan, sauté sliced red bell peppers for about 8 minutes, then add spinach and cook for 2 more minutes.
  4. Plate with the desired amount of rice, chicken, and veggies. Garnish with homemade or store-bought pico de gallo and lime wedges.

2 cups broccoli florets

2 medium-sized sweet potatoes, peeled and cut into ½-inch thick cubes

2 cups Brussels sprouts, trimmed and halved

1 Tbsp. oil

INSTRUCTIONS
  1. Preheat oven to 425 degrees.
  2. Place sweet potatoes, broccoli florets, and Brussels sprouts on a large baking sheet and drizzle with oil, salt, and pepper. Roast for 25-30 minutes or until tender.

1 bag mixed greens

3 cups chopped vegetables of choice (bell pepper, tomato, cucumber, carrots, etc.)

INSTRUCTIONS
  1. Prepare salad by tossing vegetables of choice with mixed greens and plate.
  2. Prepare Roasted Garlic Chicken meal as directed.
