  • 4 cups baby spinach
  • 2 eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated parmesan cheese
  • ¼ tsp. salt
  • ¼ tsp. garlic powder
  • ¼ tsp. oregano
  • 1 package grape tomatoes
  • 1 Tbsp. olive oil
  • 6 oz. block feta cheese
INSTRUCTIONS
  1. Preheat oven to 400 degrees.
  2. In a food processor, blend the spinach, eggs, cheeses, and seasonings until smooth or paste-like.
  3. Line a baking sheet with parchment paper. Spray with non-stick spray.
  4. Pour spinach mixture onto the parchment paper. Using a spatula, spread the mixture into a rectangle that covers the whole baking sheet.
  5. Bake for 15-20 minutes, or until the edges get a little brown. Remove from oven and set aside.
  6. In a small bowl, toss the grape tomatoes in 2 tsp. olive oil.
  7. In a small baking dish, place the block of feta in the center and coat with 1 tsp. olive oil. Add the grape tomatoes. Bake for 30 minutes.
  8. Remove the baked feta and tomatoes, stir together, and spread over prepared pizza crust. .
  9. Bake again for 10-15 minutes.
