Chile Relleno Boats Recipe

What is a chile relleno? Chile relleno means "stuffed peppers" in English and is a traditional Mexican meal that includes a poblano pepper that is stuffed with cheese and meat. This non-fried version of this recipe is a great, healthy variation for people looking for something spicy and savory. The recipe below is simple to make is a tasty, low carb alternative to the traditional dish.

INGREDIENTS
  • 1 large poblano pepper 
  • 1 small onion sliced and sauteed
  • 1/2 cup cauliflower rice
  • 1 oz fat free cream cheese
  • 1 lime (squeezed)
  • Fiesta blend seasoning
  • 1 packet of Profile Sloppy joe mix 
  • 1/4 cup reduced fat shredded cheddar or Mexican blend cheese
    sliced roasted red peppers
  • canned green chilis
  • jalapeno slices
  • green onions
  • cilantro
  • 1/4 cup salsa,
  • 1/4 cup fat free sour cream
INSTRUCTIONS
  1. Slice poblano pepper in half lengthwise, deseed
  2. Mix sautéed onion, cauliflower rice, cream cheese and fiesta blend to taste.
  3. A squeeze of lime juice will enhance fiesta blend seasoning.
  4. Spread over pepper.
  5. Prepare sloppy joe mix, reduce water for thicker consistency if desired.
  6. Spread over cream cheese mixture.
  7. Sprinkle with shredded cheese.
  8. Add remaining toppings as desired.
  9. Bake in a toaster oven or air fryer 10 minutes until the cheese is melted and lightly browned. 
  10. Top with salsa and sour cream if desired.
