This light, healthy recipe requires no cooking, just chop, mix and serve! This salad mixes some of our favorite ingredients, including shrimp, avocados and jalapeños. This recipe is gluten free and dairy free, so it is a great option for a dinner party or sports watch party. You can control the spice of this dish by removing the jalapeño seeds if you want a milder option or including seeds or adding a serrano pepper if you want to spice it up. This salad can also be used as a hearty, protein and nutrient packed lettuce topper.

INGREDIENTS
  • 1/8 cup chopped red onion

  • Juice of 2 limes

  • 1/4 tsp kosher salt, black pepper to taste

  • 1 lb cooked, peeled shrimp, chopped

  • 1 tomato, diced

  • 1 avocado, diced

  • 1 jalapeño, seeds removed, minced

  • 1 tbsp chopped cilantro

If used as a dip:

  • 1 bag of carrots or celery

  • (Optional) Tortilla chips

INSTRUCTIONS
  1. In a small bowl combine red onion, lime juice, salt, and pepper. Let marinate while preparing the rest of the recipe.
  2. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño.
  3. Combine ingredients, add cilantro and gently stir.
  4. Serve with vegetables or tortilla chips.
